At the helm of the company is founder and Executive Chef Isaac Perlman, whose career blends deep culinary training with sharp hospitality insight. Early in his journey, he trained in the kitchens of renowned chef Harry Sasson—one of Latin America’s most celebrated culinary figures—and honed his understanding of restaurant operations under respected restaurateur Leo Katz.

A graduate of Florida International University’s prestigious Chaplin School of Hospitality, Chef Perlman has since built a reputation for delivering exceptional dining experiences in some of Miami’s most exclusive communities. His private catering work has served clients across Golden Beach, Indian Creek, Bal Harbour, and other premier neighborhoods.

In 2020, he launched his first brick-and-mortar concept, PERL by Chef IP, a fine-casual restaurant in Aventura that reflects his commitment to quality, creativity, and guest-centered service. Today, Chef Isaac leads the brand’s continued growth, bringing a chef-driven, hospitality-first approach to every table he touches.
